Brainy Bellies Magic Pink Oatmeal

A creamy, nourishing bowl of oatmeal packed with gut-healthy ingredients that kids will love! The secret trick? Using leftover beet water to turn the oatmeal a beautiful pink or purple color that makes breakfast feel magical and exciting for little ones!

Ingredients

• 1 cup organic quick oats

• 2 cups whole pastured raised milk or any plant milk (plus more if needed)

• 1/2 cup chia seeds

• 1 tbsp honey

• 1 tsp vanilla extract

• 1/2 tsp cinnamon

• 1/2 to 3/4 cup pumpkin seeds

• 1/2 to 1 cup fresh blueberries

• 1/2 cup leftover beet water for color (optional)

Instructions

Step 1 - Combine organic oats and milk: Add the organic oats and milk to a medium saucepan over medium heat. Stir to combine.

Step 2 - Add chia seeds, honey, vanilla and cinnamon: Add the chia seeds, honey, vanilla, and cinnamon to the pot. Stir everything together well.

Step 3 - Cook until creamy: Cook over medium heat, stirring frequently, until the oatmeal thickens and becomes creamy, about 5 to 7 minutes. If the oatmeal gets too clumpy, add a splash more milk and stir until you reach your desired consistency.

Step 4 - Add beet water for a magical color (optional): Stir in a splash of leftover beet water to turn the oatmeal a beautiful pink or purple color! Kids absolutely love this and it adds a natural boost of antioxidants too.

Step 5 - Top and serve: Ladle the oatmeal into bowls and top with pumpkin seeds and fresh blueberries. Serve warm and enjoy!

Tips

Always choose organic oats - conventional oats are one of the most heavily sprayed crops and can contain pesticide residues that may disrupt your child’s gut microbiome. For the milk, whole pastured raised dairy is the best choice as it is higher in omega-3s and beneficial nutrients. If using plant milk, always read the ingredient label and choose one with a short, clean ingredient list. Avoid plant milks that contain gums, emulsifiers, or a long list of additives such as carrageenan, xanthan gum, or sunflower lecithin - these ingredients can irritate the gut lining and disrupt the microbiome. The best plant milks have just two or three ingredients. Chia seeds add a powerful boost of prebiotic fiber and omega-3s. Pumpkin seeds are packed with zinc and magnesium to support brain development and immune function. Blueberries are rich in antioxidants that reduce gut inflammation and support cognitive function in growing children. The beet water trick is a fun and completely natural way to turn the oatmeal pink or purple - simply save the water from boiled or steamed beets and stir a little in before serving!
